Wavy Burgers, the eclectic all-day eatery in downtown National City has a secret: in addition to slinging hand-held breakfast sandwiches and juicy smash burgers, you’ll also find a surprisingly prestigious selection of sweets created by pastry chef Letha Gimble.

There are scones, biscuits, and galettes starring seasonal fruit, along with cake by the slice and pints of ice cream, but if you only get one thing, make it the Rice Krispy cookie.
Precisely baked to achieve crispy edges and a tender, chewy middle, this tasty treat has crisp rice cereal and bits of Valrhona Dulcey Blond Chocolate folded into the dough, which gives it an oatmeal-adjacent texture and buttery pops of toasted caramel. On top, there’s a spoonful of marshmallow fluff and a full Dulcey feve, which melts and caramelizes in the oven to form a gooey center that taps directly into the brain’s dopamine receptors.
Letha says she’s a chocolate chip cookie girl at heart, but she wanted to create something special for Wavy that she could feel proud of. The result is a “love letter to the cookie” that celebrates a beloved childhood snack.
The Rice Krispy cookie is big enough to share, but so delicious that solo ownership is suggested. For the best experience, pair it with a cortado or iced coffee from the Friends of Friends coffee bar.
